Having just returned from a semester abroad in Mexico City, I'd say one of the things I miss most in the world is being able to wake up and walk down the block, grab some street tacos and pick up kilos upon kilos of mangoes and other fresh tropical fruit from the local market - all for only a few pesos. I could eat mangoes all day long just plain and simple (con chile y limon of course), but there are actually tons of other ways to enjoy this nutrient-rich superfruit.

While I'm pretty sure Mexicans don't celebrate Cinco de Mayo quite like Americans - using the holiday as an excuse to eat Mexican food and drink - the following are perfect recipes for any Cinco de Mayo celebration.

This year's Cinco de Mayo celebration has to include mangoes - and lots of them. From salsa to tacos and cocktails, these recipes are all you need for the ultimate feast. 

1. Mango Salsa

Of course, no party is complete without salsa. I used to only eat mangoes at home if they were already cut for me since it was always too much of a hassle and not worth the effort for me - that is, until I actually learned how to cut them. Now, enjoying mangoes is easier than ever. This salsa only has a handful of ingredients but it's sure to be a crowd pleaser. 

2. Baja Fish Tacos

I used to be terrified of any food that came from the sea, but after being a vegetarian for too long, I decided to switch things up and become a a pescatarian. Fish tacos are now my go-to pick. These super simple fish tacos are made with cod, but you can substitute in any meat of your liking. Just make some extra salsa from the recipe above and throw it on your tacos for a sweet kick. 

3. Grilled Corn and Mango Salad

I'm usually not big on salads, but this is not a boring salad, I promise! If you're trying to watch the cals, skip the tacos and go for this filling corn and mango salad. Add tortilla chips for an extra crunch to this tasty and healthy recipe. 

4. Mango Michelada

No fiesta is complete without the best beer cocktail to ever exist. While a classic clam juice and beer combo never disappoints, flavored micheladas, especially mango flavored ones are beyond amazing. God bless this beautiful creation. 

There are loads of variations of this drink with sometimes questionable ingredients. While it may be my personal favorite drink of mine, it's one of those drinks where you'll either absolutely love it or you'll hate it. The sound of clam juice in my beer along with spices, tomato juice, salt, and lime doesn't sound all that appealing, its unique flavor is something I could probably never grow tired of. Luckily, if you have some clam juice or hot sauce on hand, this drink is super easy to whip up in a couple minutes.  Toss in some mango puree for some extra flavor. 

5. Sparkling Mango Strawberry Sangria

If you're looking for a bit of a sweeter drink, this sparkling mango strawberry sangria is for you. This one's got sparkling wine, OJ, and vodka for the main ingredients. Cinnamon and fresh fruit are also thrown in for some added flavor.

Whether you've got a big fiesta planned or not, these simple recipes are perfect for enjoying this Mexican holiday and celebrating the date of the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War.
